5 large carrots, peeled
1 tbsp olive oil
1/2 tsp dried oregano
1/2 tsp paprika
Salt and pepper to taste
Chop the carrots into fries. I cut the whole carrot into thirds then cut each of those into fourths or more length-wise depending on thickness. Thinner fries tend to crisp up nicer.
Toss them in olive oil first then add spices and toss again.
For an air fryer, put them in the basket and salt and pepper them before cooking them at 390°F for 10 minutes then toss and cook for 5 more.
If baking in an oven, put them in a cookie sheet then sprinkle salt and pepper over the top. Bake them at 400° for 20-30 minutes, flipping them after 10 minutes.
I eat them with a lemon, curry aoli made with low fat mayo. Light ranch is also a nice dip for these.
